A World of White

What a Morning , the frost created a world of white as Lyn and I walked up to the restaurant, it was strikingly beautiful, we have guests staying in the railway carriage so its up nice and early to make breakfast for them, as we walked up I observed that the big willow in front of the restaurant was ablaze with pink flowers, now even I know that willows do not have pink flowers, especially in the cold heart of winter, and yet there it was, as we neared this phenomena it came alive a squawking mass of galah's rose to flight, their must have been hundreds of them. As they tangled and swirled into a kinetic madness the early light crisply giving form to the mass and separating them from the sullen blue of the sky. Before I could get a shot of them most had departed but I managed to catch a few stragglers as they took off


This is one of the myriad rewards of a simple country life

This week has been hectic for us here at Eastview/Dobson’s...we have done three full days brewing, and have been assessing the wine to prepare for bottling, both reds and whites. Also my son Joshua visited from Sydney bringing with him the cold weather. Pudgy McDucks blues bar is travelling well and will be complete in around three weeks or so give a stiff tail wind. I must admit it is looking amazing. I have completed almost all the test brews and have locked in the formula’s, so we are fast approaching having beer for sale. We already have our first two guest brewers in place Mark Gallately from MHB in Newcastle, and Alex Lovelock who is a brewer and chef from Seddon in Victoria. Alex is also working on a special dish for us to serve in the restaurant to match the smoked Vienna Ale he is developing. These are exciting times
